The study of foundational principles of human nourishment and healthful eating patterns across the life cycle, with an emphasis on nutrient metabolism and the roles of vitamins and minerals in supporting physiological function. Topics include dietary patterns such as plant-based, functional foods and supplements, and the relationship between nutrition and chronic disease.
